How to Cook Frozen Snail Meat

Preparation
There are over 20+ types of edible snails around the world. One common snail used for meat is the African Giant Snail. Since farming the African Giant Snail is restricted in most countries, this snail is mostly available as Frozen Snail Meat or Oven Dried Snail. Let's discover how to cook frozen snail meat.
Ingredients
1lb Frozen Snail or Oven Dried Snails
1 Large Diced Onions
1/2 cup of Freshly Chopped Cilantro
1/2 tablespoon of Salt
2 tablespoons of Chopped garlic
2 cups of crushed tomatoes
1 cup of vegetable oil
1/2 tablespoon of Black pepper
1/2 tablespoon of White pepper
4 Maggi cubes
White pepper
Snail Stew Recipe
Soak the snails in warm water for 3-4 hours for dried or frozen snails. This may take longer if the frozen snails are stuck together. Rinse out any debris.
Add 1lb of snail to 50 oz of water + 2 tablespoons of salt and boil the snails for 25 minutes if snails were presoaked, or for 45mins if they were not presoaked. It is best to use snails that were dried before freezing. This way, the snails are not stuck to each other.
Save the snail broth and strain the snail. All snails to cook longer if you desire a softer texture.
Preheat your vegetable oil in a separate pan and add in the crushed tomatoes. Gently stir the tomatoes every minute on medium heat for 20minutes.
Add the cooked snails to the tomato sauce. Add half of all your chopped onions, cilantro and garlic to the sauce. Also add 1 tablespoon of salt and 4 Maggi cubes. Stir fry the mixture for 15 minutes.
Then add 3 cups of the snail broth from step 2 above. Cook for 10 more minutes and allow the sauce to thicken.
Add the remaining chopped garlic, onions, cilantro. Then add black pepper and white pepper, allow to cook for another 5 minutes.
Serve with steamed white rice or fried plantains. Enjoy!
